The alcoholic fermentation is carried out spontaneously with the native yeasts of the vineyard, the maceration is personalized at a relative time and depending on the vintage and the characteristics of the future wine.
Our wines go through an aging process in 225-liter barrels, 60% French oak AND 40% American oak. The type of aging and the time is determined by the age of the vineyard and the characteristics of each vintage
